How do I stretch a game over two monitors?

Q: I have two monitors connected to one video card on my PC, and I have the desktop extended, but when I play a game, it still displays on only 1 monitor. How do i extend the game image over two monitors? I know that the games (Flight Simulator and Medal of Honor) are capable of stretching the image.
